Designed as a batch pre-mixed that's packed with the essence associated with Christmas time, which makes it ideal for a festive gathering. Save the extra citrus syrup you can use for breakfast cocktails, sweets, or to mix additional servings of this cocktail.
Bikini Recipe
Serves 10 guests
For the Clementine Cordial (makes 750ml)
300ml recently pressed clementine juice
200ml fresh lemon juice
500g caster sugar
For the Cocktail (produces 850ml, enough for 10)
400ml premium vodka
100ml dry gin
150ml peach-flavored liqueur
200ml clementine syrup (as made above)
Fresh cranberries, to garnish
Mandarin essential oil, to finish
Method
For the Citrus Syrup: Combine all the items inside a pan, bring to a gentle boil, mixing so the sugar melts. Next, turn off the heat and let it to cool down fully. Pour to a sterilised bottle, cap it keeping it in the fridge, it can be stored for up to four weeks.
To make Batch Mix: Pour the specified liquid ingredients into a big jug, leave to sit for an hour, then pass it through preferably using cheesecloth, so it's perfectly clear.
When ready to serve: Pour 85ml from the cocktail base into a mixing glass containing ice, and agitate lightly for about 60 seconds until cold. Pour to a chilled martini glass or equivalent, top with the cranberries and complete it using a light spray of mandarin oil above the glass.
